Ingredients

  • 2 lbs chicken breasts
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • 1/2 teaspoon pepper
  • 2 cups biscuit mix
  • 2/3 cup milk

Instructions

  1. Place chicken in the crockpot.
  2. Add chicken broth, carrots, celery, onion, garlic powder, thyme, and pepper.
  3. Cook on low for 6-8 hours or high for 4 hours.
  4. Remove chicken and shred it.
  5. Mix biscuit mix and milk in a bowl.
  6. Drop spoonfuls of the biscuit mixture into the crockpot.
  7. Cook for an additional 30 minutes on high until dumplings are cooked.
  8. Return shredded chicken to the pot and stir before serving.

Notes

  • Adjust seasoning to taste.
  • Use frozen vegetables for quicker prep.
  • Add more broth if a soupier consistency is desired.
