Description
A comforting dish of chicken and dumplings cooked in a crockpot.
Ingredients

- 2 lbs chicken breasts
- 4 cups chicken broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 1 teaspoon garlic powder
- 1 teaspoon thyme
- 1/2 teaspoon pepper
- 2 cups biscuit mix
- 2/3 cup milk
Instructions
- Place chicken in the crockpot.
- Add chicken broth, carrots, celery, onion, garlic powder, thyme, and pepper.
- Cook on low for 6-8 hours or high for 4 hours.
- Remove chicken and shred it.
- Mix biscuit mix and milk in a bowl.
- Drop spoonfuls of the biscuit mixture into the crockpot.
- Cook for an additional 30 minutes on high until dumplings are cooked.
- Return shredded chicken to the pot and stir before serving.
Notes
- Adjust seasoning to taste.
- Use frozen vegetables for quicker prep.
- Add more broth if a soupier consistency is desired.
