A simple and flavorful crockpot bourbon chicken recipe.
Ingredients

- 2 pounds boneless chicken thighs
- 1 cup bourbon
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 1/4 cup ketchup
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1/4 teaspoon black pepper
- 1 tablespoon cornstarch
- 2 tablespoons water
Instructions
- Place chicken thighs in the crockpot.
- In a bowl, mix bourbon, soy sauce, brown sugar, ketchup, garlic, ginger, and black pepper.
- Pour the mixture over the chicken.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, remove chicken and shred it.
- In a small bowl, mix cornstarch and water to create a slurry.
- Stir the slurry into the sauce in the crockpot and cook on high for 15 minutes to thicken.
- Return shredded chicken to the crockpot and mix well.
Notes
- Serve with rice or noodles.
- Adjust bourbon to taste.
- Store leftovers in the refrigerator.
