Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 2 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 bay leaf
  • 1 tbsp Worcestershire sauce

Instructions

  1. Brown the beef in a skillet over medium heat.
  2. Transfer beef to the crockpot.
  3. Add carrots, potatoes, onion, and garlic.
  4. Pour in beef broth and add tomato paste, thyme, salt, pepper, bay leaf, and Worcestershire sauce.
  5. Stir to combine all ingredients.
  6. Cover and cook on low for 8 hours or high for 4 hours.
  7. Remove bay leaf before serving.

Notes

  • Feel free to add other vegetables like peas or green beans.
  • For thicker stew, mix 2 tbsp cornstarch with cold water and add to the stew in the last 30 minutes of cooking.
