A hearty and flavorful crockpot beef stew.
Ingredients

- 2 lbs beef chuck, cut into 1-inch cubes
- 4 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tbsp tomato paste
- 2 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 1 bay leaf
- 1 tbsp Worcestershire sauce
Instructions
- Brown the beef in a skillet over medium heat.
- Transfer beef to the crockpot.
- Add carrots, potatoes, onion, and garlic.
- Pour in beef broth and add tomato paste, thyme, salt, pepper, bay leaf, and Worcestershire sauce.
- Stir to combine all ingredients.
- Cover and cook on low for 8 hours or high for 4 hours.
- Remove bay leaf before serving.
Notes
- Feel free to add other vegetables like peas or green beans.
- For thicker stew, mix 2 tbsp cornstarch with cold water and add to the stew in the last 30 minutes of cooking.
