A delicious and hearty spicy chicken soup made in a crock pot.


Ingredients

  • 1 lb chicken breast
  • 1 can diced tomatoes (14.5 oz)
  • 1 can black beans (15 oz), drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp cayenne pepper
  • 4 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. Place chicken breast at the bottom of the crock pot.
  2. Add diced tomatoes, black beans, corn, onion, garlic, and bell pepper.
  3. Sprinkle cumin, chili powder, cayenne, salt, and pepper over the mixture.
  4. Pour chicken broth on top.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Shred the chicken before serving.
  7. Serve hot and enjoy.
