Description
A delicious and hearty spicy chicken soup made in a crock pot.
Ingredients

- 1 lb chicken breast
- 1 can diced tomatoes (14.5 oz)
- 1 can black beans (15 oz), drained and rinsed
- 1 cup corn (frozen or canned)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp cayenne pepper
- 4 cups chicken broth
- Salt and pepper to taste
Instructions
- Place chicken breast at the bottom of the crock pot.
- Add diced tomatoes, black beans, corn, onion, garlic, and bell pepper.
- Sprinkle cumin, chili powder, cayenne, salt, and pepper over the mixture.
- Pour chicken broth on top.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Shred the chicken before serving.
- Serve hot and enjoy.

- Adjust spices according to your heat preference.
- Great with tortilla chips or bread.
- Can add cheese or avocado as toppings.
