Creamy and cheesy potato soup made in a crock pot.
Ingredients

- 6 medium potatoes, diced
- 1 onion, chopped
- 4 cups vegetable broth
- 1 cup shredded cheddar cheese
- 1 cup milk
- 1/2 cup cream cheese
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Add diced potatoes, onion, and vegetable broth to the crock pot.
- Cook on low for 6-8 hours or high for 3-4 hours until potatoes are tender.
- Stir in cheddar cheese, milk, and cream cheese.
- Add garlic powder, salt, and pepper.
- Mix until cheese is melted and soup is creamy.
Notes
- Top with extra cheese or green onions if desired.
- Store leftovers in the refrigerator.
- Reheat on the stove or in the microwave.
