Ingredients

  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • Pepper to taste
  • 1/2 cup mayonnaise

  • 1 tablespoon Dijon mustard
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Boil potatoes in salted water until fork-tender, about 15-20 minutes.
  3. Drain and let them cool slightly.
  4. Place potatoes on a baking sheet and smash them gently with a fork.
  5. Drizzle with olive oil, garlic powder, onion powder, salt, and pepper.
  6. Bake for 25-30 minutes until crispy and golden.
  7. In a bowl, mix mayonnaise, apple cider vinegar, and Dijon mustard.
  8. Add green onions and parsley to the dressing.
  9. Once potatoes are done, let them cool slightly, then mix with the dressing.
  10. Serve warm or chilled.
