Ingredients

- 2 pounds baby potatoes
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt to taste
- Pepper to taste
- 1/2 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1/4 cup chopped green onions
- 1/4 cup chopped fresh parsley
Instructions
- Preheat oven to 425°F (220°C).
- Boil potatoes in salted water until fork-tender, about 15-20 minutes.
- Drain and let them cool slightly.
- Place potatoes on a baking sheet and smash them gently with a fork.
- Drizzle with olive oil, garlic powder, onion powder, salt, and pepper.
- Bake for 25-30 minutes until crispy and golden.
- In a bowl, mix mayonnaise, apple cider vinegar, and Dijon mustard.
- Add green onions and parsley to the dressing.
- Once potatoes are done, let them cool slightly, then mix with the dressing.
- Serve warm or chilled.

- Feel free to add other herbs or spices.
