Description

Crispy oven baked potato skins are a delicious snack or appetizer made with the skin of potatoes, topped with cheese and bacon.


Ingredients

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup sour cream
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the potatoes.
  3. Pierce the potatoes with a fork and bake for 45-60 minutes until tender.
  4. Let the potatoes cool slightly, then cut them in half and scoop out some of the flesh.
  5. Brush the insides with olive oil and season with salt and pepper.
  6. Bake the skins in the oven for 10 minutes until crispy.
  7. Remove from the oven and fill with cheese and bacon.
  8. Return to the oven and bake for an additional 5-10 minutes until cheese is melted.
  9. Top with sour cream and green onions before serving.
