Description
Crispy oven baked potato skins are a delicious snack or appetizer made with the skin of potatoes, topped with cheese and bacon.
Ingredients

			- 4 large russet potatoes
 - 2 tablespoons olive oil
 - 1 cup shredded cheddar cheese
 - 1/2 cup cooked and crumbled bacon
 - 1/4 cup sour cream
 - 2 green onions, chopped
 - Salt and pepper to taste
 
Instructions
- Preheat your oven to 400°F (200°C).
 - Wash and dry the potatoes.
 - Pierce the potatoes with a fork and bake for 45-60 minutes until tender.
 - Let the potatoes cool slightly, then cut them in half and scoop out some of the flesh.
 - Brush the insides with olive oil and season with salt and pepper.
 - Bake the skins in the oven for 10 minutes until crispy.
 - Remove from the oven and fill with cheese and bacon.
 - Return to the oven and bake for an additional 5-10 minutes until cheese is melted.
 - Top with sour cream and green onions before serving.

- Use any type of cheese you prefer.
 - Feel free to add other toppings like jalapeños or mushrooms.
