Crispy homemade falafel made from chickpeas and fresh herbs.


Ingredients

  • 1 cup dried chickpeas, soaked overnight
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon baking powder
  • Salt to taste
  • Oil for frying

Instructions

  1. Drain and rinse the soaked chickpeas.
  2. In a food processor, combine chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking powder, and salt.
  3. Pulse until coarsely ground but not pureed.
  4. Form the mixture into small balls or patties.
  5. Heat oil in a deep pan over medium heat.
  6. Fry the falafel until golden brown on all sides.
  7. Drain on paper towels.
  8. Serve warm with tahini sauce or in pita.

Notes

  • Do not use canned chickpeas for the best texture.
