- 4 catfish fillets
- 1 cup cornmeal
- 1 cup buttermilk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- Vegetable oil for frying
Instructions
- Rinse catfish fillets under cold water.
- Soak the fillets in buttermilk for at least 30 minutes.
- In a bowl, mix cornmeal, salt, black pepper, and cayenne pepper.
- Heat oil in a deep skillet over medium heat.
- Dredge each fillet in the cornmeal mixture, coating evenly.
- Fry the fillets for 3-4 minutes on each side or until golden brown.
- Remove from oil and place on paper towels to drain.
