Ingredients

- 2 cups crawfish tails
- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 1/2 cup milk
- 2 large eggs
- 1 teaspoon baking powder
- 1/2 teaspoon cayenne pepper
- Salt to taste

- 1 cup cheddar cheese, shredded
- 1 jalapeno, finely chopped
- 1/2 cup sour cream
Instructions
- In a bowl, mix flour, cornmeal, baking powder, cayenne, and salt.
- In another bowl, whisk together milk and eggs.
- Combine the wet and dry ingredients.
- Fold in crawfish tails.
- Heat oil in a deep pot.
- Drop spoonfuls of the mixture into hot oil and fry until golden brown.
- For the dip, mix cheddar cheese, jalapeno, and sour cream in a bowl.
- Serve beignets hot with the jalapeno cheddar dip.
