Ingredients

  • 500g chicken breast, cut into bite-sized pieces
  • 1 cup cornflour
  • 2 eggs, beaten
  • 2 tablespoons soy sauce
  • 2 tablespoons chili sauce
  • 1 tablespoon vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 tablespoons vegetable oil
  • Salt to taste

Instructions

  1. Marinate the chicken with soy sauce, salt, and chili sauce for 30 minutes.
  2. Dredge the marinated chicken in cornflour, then dip in beaten eggs.
  3. Heat oil in a pan and fry the chicken until golden brown.
  4. Remove chicken and drain on paper towels.
  5. In the same pan, add garlic, ginger, onion, and bell pepper. Sauté for a few minutes.
  6. Add the fried chicken back to the pan.
  7. Mix vinegar and any remaining chili sauce, then pour over the chicken.
  8. Toss well to coat and serve hot.
