Ingredients

- 2 cups mixed greens
- 1 cup cooked, crispy chicken, chopped
- 1/2 cup cherry tomatoes, halved
- 1/4 cup cucumber, sliced
- 1/4 cup shredded carrots
- 1/4 cup red onion, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Wash and dry the mixed greens.
- In a large bowl, combine greens, chicken, tomatoes, cucumber, carrots, and onion.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss well.
- Serve immediately.
