Instructions
- Preheat your oven to 425°F (220°C).
- Boil sweet potatoes in salted water until tender, about 15 minutes.
- Drain and mash sweet potatoes in a bowl.
- Add shredded cheese, breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper. Mix well.
- Form the mixture into small bites and place them on a baking sheet.
- Drizzle with olive oil.
- Bake for 20-25 minutes until golden and crispy.
- Serve warm.
