Crispy bang bang salmon bites served in bowls.
Ingredients

- 1 lb salmon fillet, cut into bite-sized pieces
- 1 cup panko breadcrumbs
- 1/2 cup flour
- 2 eggs, beaten
- 1/2 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha sauce
- 1 tablespoon lime juice
- Salt and pepper to taste
- Cooked rice or quinoa for serving
- Fresh vegetables (cucumber, carrots, or avocado) for topping
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare a baking sheet with parchment paper.
- Season the salmon pieces with salt and pepper.
- Set up a breading station with flour, beaten eggs, and panko breadcrumbs.
- Dredge each salmon piece in flour, dip in egg, then coat with panko.
- Place the breaded salmon on the baking sheet.
- Bake for 12-15 minutes until golden and crispy.
- In a bowl, mix mayonnaise, sweet chili sauce, sriracha, and lime juice.
- Toss the crispy salmon bites in the sauce.
- Serve over rice or quinoa and top with fresh vegetables.
Notes
- Adjust the spice level by adding more or less sriracha.
- For a gluten-free option, use gluten-free breadcrumbs.
- Store leftovers in an airtight container in the fridge.
