Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 pound ground turkey or chicken
  • 4 cups chicken broth
  • 1 can (15 ounces) ricotta cheese
  • 2 cups heavy cream
  • 8 ounces lasagna noodles, broken into pieces
  • 2 cups spinach, fresh
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onion and minced garlic. Sauté until onion is translucent.
  3. Add ground turkey or chicken. Cook until browned.
  4. Pour in chicken broth and bring to a simmer.
  5. Add ricotta cheese and heavy cream. Stir until well combined.
  6. Add broken lasagna noodles. Cook until noodles are tender.
  7. Stir in fresh spinach and cook until wilted.
  8. Remove from heat and stir in mozzarella and Parmesan cheese.
  9. Season with salt and pepper to taste.

Notes

  • Use any ground meat of your choice.
  • For a vegetarian option, skip the meat and add more vegetables.
