- 1 cup heavy cream
- 4 cups vegetable broth

- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, sauté for about 5 minutes until translucent.
- Add chopped tomatoes to the pot and cook for 10-15 minutes until softened.
- Pour in vegetable broth and bring to a gentle simmer. Cook for an additional 15-20 minutes.
- Blend the soup until smooth using an immersion blender or countertop blender.
- Return the blended soup to low heat, stir in heavy cream and chopped basil, and season with salt and pepper. Heat gently for 5 minutes.
