Ingredients

  • 4 cloves minced garlic
  • 1 medium diced onion
  • 1 cup packed, roughly chopped fresh basil
  • 1 cup heavy cream
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, sauté for about 5 minutes until translucent.
  2. Add chopped tomatoes to the pot and cook for 10-15 minutes until softened.
  3. Pour in vegetable broth and bring to a gentle simmer. Cook for an additional 15-20 minutes.
