Creamy spinach mushroom lasagna is a rich and flavorful dish that combines layers of pasta, spinach, mushrooms, and a creamy sauce.

- 9 lasagna noodles
- 2 cups fresh spinach
- 2 cups mushrooms, sliced
- 2 cups ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup parmesan cheese, grated
- 2 cups cream
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions.
- In a skillet, heat olive oil over medium heat. Add garlic and mushrooms, sauté until mushrooms are soft.
- Add spinach to the skillet and cook until wilted. Season with salt and pepper.
- In a bowl, mix ricotta cheese, cream, and half of the mozzarella cheese.
- Spread a layer of the ricotta mixture in the bottom of a baking dish.
- Layer 3 lasagna noodles over the ricotta mixture.
- Add half of the spinach and mushroom mixture on top.
- Repeat layers, ending with a layer of noodles and remaining ricotta mixture.
- Top with remaining mozzarella and parmesan cheese.
- Bake for 30-35 minutes until golden and bubbly.
Notes
- You can substitute frozen spinach for fresh spinach.
- Let the lasagna rest for 10 minutes before serving.
