Ingredients

- 9 lasagna noodles
- 2 cups fresh spinach
- 2 cups mushrooms, sliced
- 2 cups ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1 cup parmesan cheese, grated
- 3 cups marinara sauce
- 1 teaspoon garlic, minced
- 1 teaspoon olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions.
- In a pan, heat olive oil and sauté garlic and mushrooms until tender.
- Add spinach and cook until wilted. Season with salt and pepper.
- In a baking dish, spread a layer of marinara sauce.
- Add 3 lasagna noodles over the sauce.
- Spread half of the ricotta cheese over the noodles.
- Add half of the mushroom and spinach mixture on top.
- Add a layer of mozzarella and parmesan cheese.
- Repeat the layers, finishing with noodles, sauce, and remaining cheese.
- Bake in the oven for 30-35 minutes until cheese is bubbly.
Notes
- Let the lasagna rest for 10 minutes before serving.
- Use no-boil noodles for quicker preparation.
- Add herbs like basil for extra flavor.
