Ingredients

  • 9 lasagna noodles
  • 2 cups fresh spinach
  • 2 cups mushrooms, sliced
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup parmesan cheese, grated
  • 3 cups marinara sauce
  • 1 teaspoon garlic, minced
  • 1 teaspoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions.
  3. In a pan, heat olive oil and sauté garlic and mushrooms until tender.
  4. Add spinach and cook until wilted. Season with salt and pepper.
  5. In a baking dish, spread a layer of marinara sauce.
  6. Add 3 lasagna noodles over the sauce.
  7. Spread half of the ricotta cheese over the noodles.
  8. Add half of the mushroom and spinach mixture on top.
  9. Add a layer of mozzarella and parmesan cheese.
  10. Repeat the layers, finishing with noodles, sauce, and remaining cheese.
  11. Bake in the oven for 30-35 minutes until cheese is bubbly.

Notes

  • Let the lasagna rest for 10 minutes before serving.
  • Use no-boil noodles for quicker preparation.
