A flavorful and creamy pasta salad with a Southwest twist.


Ingredients

  • 8 oz rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 red bell pepper, diced
  • 1/2 cup red onion, diced
  • 1 cup creamy dressing (ranch or Southwest style)
  • 1/2 cup cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooled pasta, cherry tomatoes, black beans, corn, red bell pepper, and red onion.
  3. In a separate bowl, mix the creamy dressing, lime juice, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss to combine.
  5. Add chopped cilantro and mix gently.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • Adjust the spice level by adding jalapeños if desired.
  • Can be made a day ahead for better flavor.
