Description
A flavorful and creamy pasta salad with a Southwest twist.
Ingredients

			- 8 oz rotini pasta
 - 1 cup cherry tomatoes, halved
 - 1 cup black beans, rinsed and drained
 - 1 cup corn kernels
 - 1 red bell pepper, diced
 - 1/2 cup red onion, diced
 - 1 cup creamy dressing (ranch or Southwest style)
 - 1/2 cup cilantro, chopped
 - 1 lime, juiced
 - Salt and pepper to taste
 
Instructions
- Cook the rotini pasta according to package instructions. Drain and let cool.
 - In a large bowl, combine the cooled pasta, cherry tomatoes, black beans, corn, red bell pepper, and red onion.
 - In a separate bowl, mix the creamy dressing, lime juice, salt, and pepper.
 - Pour the dressing over the pasta salad and toss to combine.
 - Add chopped cilantro and mix gently.
 - Chill in the refrigerator for at least 30 minutes before serving.
 
Notes
- Adjust the spice level by adding jalapeños if desired.
 - Can be made a day ahead for better flavor.
 - Storage: Keep in an airtight container in the fridge for up to 3 days.
