Description

Creamy shrimp enchiladas are a delicious Mexican dish filled with shrimp and topped with a rich creamy sauce.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 8 corn tortillas
  • 1 cup cream cheese
  • 1 cup shredded cheese
  • 1 cup salsa
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Add onions and garlic, sauté until soft.
  3. Add shrimp, cumin, salt, and pepper. Cook until shrimp is pink.
  4. In a bowl, mix cream cheese and salsa until smooth.
  5. Fill each tortilla with shrimp mixture and roll them up.
  6. Place rolled tortillas in a baking dish. Pour cream cheese mixture on top and sprinkle with shredded cheese.
  7. Bake for 20 minutes, until cheese is bubbly.
