Ingredients

- 2 cups tomatoes, chopped
- 1 head garlic, roasted
- 1 onion, diced
- 2 tablespoons olive oil
- 2 cups vegetable broth
- 1 cup heavy cream
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Roast the garlic head for 30 minutes until soft.
- In a pot, heat olive oil over medium heat. Add onion and sauté until translucent.
- Add chopped tomatoes and cook for 10 minutes.
- Squeeze the roasted garlic into the pot.
- Add vegetable broth and bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Blend the soup until smooth.
- Stir in heavy cream and season with salt and pepper.
- Serve warm.
Notes
- Use fresh tomatoes for better flavor.
- Adjust the thickness by adding more or less broth.
- Garnish with basil if desired.
