Ingredients

  • 2 cups tomatoes, chopped
  • 1 head garlic, roasted
  • 1 onion, diced
  • 2 tablespoons olive oil
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roast the garlic head for 30 minutes until soft.
  3. In a pot, heat olive oil over medium heat. Add onion and sauté until translucent.
  4. Add chopped tomatoes and cook for 10 minutes.
  5. Squeeze the roasted garlic into the pot.
  6. Add vegetable broth and bring to a boil.
  7. Reduce heat and simmer for 15 minutes.
  8. Blend the soup until smooth.
  9. Stir in heavy cream and season with salt and pepper.
  10. Serve warm.

Notes

  • Use fresh tomatoes for better flavor.
  • Adjust the thickness by adding more or less broth.
