Creamy red pepper pasta with burrata and herbs is a flavorful dish that combines roasted red peppers, creamy sauce, and fresh herbs.


Ingredients

  • 12 oz pasta
  • 2 red bell peppers
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 8 oz burrata cheese
  • 2 tbsp fresh basil, chopped
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Roast red bell peppers for 25 minutes until charred.
  3. Remove skins, seeds, and blend peppers until smooth.
  4. Cook pasta according to package instructions and drain.
  5. In a skillet, heat olive oil and sauté garlic for 1 minute.
  6. Add the blended peppers, cream, salt, and pepper. Cook for 5 minutes.
  7. Stir in Parmesan cheese until melted.
  8. Add pasta and mix well.
  9. Serve with burrata on top and garnish with herbs.
