Description
A creamy pasta salad loaded with fresh vegetables.
Ingredients

- 8 ounces of rotini pasta
- 1 cup of cherry tomatoes, halved
- 1 cup of cucumber, diced
- 1/2 cup of red onion, diced
- 1/2 cup of bell pepper, diced
- 1 cup of mayonnaise
- 1 tablespoon of Dijon mustard
- 1 tablespoon of lemon juice
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to the package instructions.
- Drain and rinse the pasta with cold water.
- In a large bowl, combine the pasta, tomatoes, cucumber, onion, and bell pepper.
- In a separate bowl, mix the mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
- Pour the dressing over the pasta and vegetables. Stir to coat evenly.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Feel free to add your favorite vegetables.
- This salad can be made a day in advance.
