Ingredients

  • 1 cup of cherry tomatoes, halved
  • 1 cup of cucumber, diced
  • 1/2 cup of red onion, diced
  • 1/2 cup of bell pepper, diced
  • 1 cup of mayonnaise
  • 1 tablespoon of Dijon mustard
  • 1 tablespoon of lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to the package instructions.
  2. Drain and rinse the pasta with cold water.
  3. In a large bowl, combine the pasta, tomatoes, cucumber, onion, and bell pepper.
  4. In a separate bowl, mix the mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
  5. Pour the dressing over the pasta and vegetables. Stir to coat evenly.
  6. Chill in the refrigerator for at least 30 minutes before serving.
