Ingredients
- Italian sausage: 1 lb (about 450 g), casings removed
- Onion: 1 medium, diced
- Garlic: 4 cloves, minced
- Carrots: 2 medium, diced
- Celery: 2 stalks, diced
- Chicken broth: 4 cups (about 1 liter)
- Heavy cream: 1 cup (about 240 ml)
- Parmesan cheese: 1 cup, grated (plus extra for serving)
- Fresh spinach: 4 cups (about 120 g), chopped
- Italian seasoning: 2 teaspoons
- Olive oil: 1 tablespoon
- Salt and pepper: to taste
Instructions
- Heat a large pot or Dutch oven over medium heat and add olive oil.
- Add the Italian sausage and cook for 5 to 7 minutes until browned, then remove and set aside.
- In the same pot, sauté the diced onion, carrots, and celery for about 5 minutes.
- Add minced garlic and cook for an additional 1 to 2 minutes.
- Pour in the chicken broth and add Italian seasoning, bringing the mixture to a boil, then reduce heat and simmer for 10 minutes.
- Stir in heavy cream and grated Parmesan cheese until melted and combined.
- Return the cooked sausage to the pot, add chopped spinach, and stir until wilted (about 2 to 3 minutes).
- Season with salt and pepper to taste, then serve hot.
