  • Garlic: 4 cloves, minced
  • Carrots: 2 medium, diced
  • Celery: 2 stalks, diced
  • Chicken broth: 4 cups (about 1 liter)
  • Heavy cream: 1 cup (about 240 ml)
  • Parmesan cheese: 1 cup, grated (plus extra for serving)
  • Fresh spinach: 4 cups (about 120 g), chopped
  • Italian seasoning: 2 teaspoons
  • Olive oil: 1 tablespoon
  • Salt and pepper: to taste

Instructions

  1. Heat a large pot or Dutch oven over medium heat and add olive oil.
  2. Add the Italian sausage and cook for 5 to 7 minutes until browned, then remove and set aside.
  3. In the same pot, sauté the diced onion, carrots, and celery for about 5 minutes.
  4. Add minced garlic and cook for an additional 1 to 2 minutes.
  5. Pour in the chicken broth and add Italian seasoning, bringing the mixture to a boil, then reduce heat and simmer for 10 minutes.
  6. Stir in heavy cream and grated Parmesan cheese until melted and combined.
  7. Return the cooked sausage to the pot, add chopped spinach, and stir until wilted (about 2 to 3 minutes).
  8. Season with salt and pepper to taste, then serve hot.
