- 1 cup white beans, soaked
- 1 cup sundried tomatoes, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups vegetable broth
- 1 cup coconut milk
- 2 tablespoons olive oil

Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add sundried tomatoes, cook for 2 minutes.
- Add soaked white beans, vegetable broth, and coconut milk.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Season with salt and pepper. Stir well.
- Serve warm.
