Creamy mushroom spinach stuffed sweet potatoes are a hearty and nutritious dish.


Ingredients

  • 4 medium sweet potatoes
  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 1/2 cup cream cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork.
  3. Place sweet potatoes on a baking sheet and bake for 45-60 minutes until tender.
  4. In a skillet, heat olive oil over medium heat.
  5. Add garlic and mushrooms, cooking until mushrooms are soft.
  6. Add spinach and cook until wilted.
  7. Stir in cream cheese and Parmesan until melted and creamy.
  8. Once sweet potatoes are done, cut them open and scoop out some flesh.
  9. Mix the sweet potato flesh with the mushroom spinach mixture.
  10. Stuff the sweet potatoes with the mixture and serve hot.
