- 1 cup Arborio rice
- 4 cups vegetable broth
- 1 cup sliced mushrooms
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 1/2 cup white wine
- 1/2 cup Parmesan cheese, grated
- 2 tablespoons olive oil
- Salt to taste
- Black pepper to taste
Instructions
- Heat the vegetable broth in a saucepan and keep it warm.
- In a separate pan, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
- Add sliced mushrooms and cook until soft.
- Stir in the Arborio rice and toast for about 2 minutes.
- Pour in the white wine and stir until absorbed.
- Add warm broth one ladle at a time, stirring continuously until absorbed before adding more.
- Continue this process for about 18-20 minutes until the rice is creamy and al dente.
- Remove from heat and stir in Parmesan cheese. Season with salt and black pepper.

- For extra creaminess, add a splash of cream.
- Use fresh herbs like parsley for garnish.
