Ingredients

  • 4 cups vegetable broth
  • 1 cup sliced mushrooms
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup white wine
  • 1/2 cup Parmesan cheese, grated
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat the vegetable broth in a saucepan and keep it warm.
  2. In a separate pan, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
  3. Add sliced mushrooms and cook until soft.
  4. Stir in the Arborio rice and toast for about 2 minutes.
  5. Pour in the white wine and stir until absorbed.
  6. Add warm broth one ladle at a time, stirring continuously until absorbed before adding more.
  7. Continue this process for about 18-20 minutes until the rice is creamy and al dente.
  8. Remove from heat and stir in Parmesan cheese. Season with salt and black pepper.
