Ingredients

  • 4 cups vegetable broth
  • 1 cup mushrooms, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup white wine
  • 1/2 cup Parmesan cheese, grated
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat the vegetable broth in a saucepan and keep it warm.
  2. In a separate pot, heat olive oil over medium heat.
  3. Add the chopped onion and cook until translucent.
  4. Add the garlic and sliced mushrooms, cooking until mushrooms are tender.
  5. Stir in the Arborio rice and cook for 1-2 minutes.
  6. Pour in the white wine and stir until absorbed.
  7. Add the warm broth, one ladle at a time, stirring frequently until absorbed.
  8. Continue this process until the rice is creamy and al dente, about 18-20 minutes.
  9. Remove from heat and stir in the Parmesan cheese.
  10. Season with salt and pepper to taste before serving.
