- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1 cup granulated sugar
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, powdered sugar, and melted butter.
- Press the mixture into the bottom of a greased 8×8 inch baking dish.
- Bake for 15 minutes until lightly golden.
- In another bowl, whisk together eggs, granulated sugar, lemon juice, lemon zest, salt, and baking powder.
- Pour the lemon mixture over the baked crust.
- Bake for an additional 20-25 minutes until set.
- Let cool, then dust with powdered sugar before serving.
Notes
- Store leftovers in the refrigerator.
- Can substitute lime juice for a different flavor.
