Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup honey
  • 2 tablespoons dried lavender
  • 1 teaspoon vanilla extract
  • 4 egg yolks

Instructions

  1. In a saucepan, heat the milk, cream, and honey over medium heat until warm.
  2. Add the dried lavender and let steep for 15 minutes.
  3. Strain the mixture to remove lavender.
  4. In a bowl, whisk the egg yolks.
  5. Slowly pour the warm mixture into the egg yolks, whisking constantly.
  6. Return the mixture to the saucepan and cook over low heat until it thickens.
  7. Remove from heat and stir in vanilla extract.
  8. Chill the mixture in the refrigerator for at least 4 hours.
  9. Churn the mixture in an ice cream maker according to manufacturer instructions.
  10. Transfer to a container and freeze until firm.
