Ingredients

- 2 cups whole wheat pasta
- 1 cup cooked chicken breast, diced
- 1 cup Greek yogurt
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Cook the whole wheat pasta according to package instructions, then drain and cool.
- In a large bowl, combine Greek yogurt, olive oil, lemon juice, salt, and pepper.
- Add the cooled pasta, chicken, cherry tomatoes, cucumber, red onion, and parsley to the bowl.
- Toss everything together until well mixed.
- Chill in the refrigerator for at least 30 minutes before serving.

- This salad can be made a day ahead.
- Feel free to add other vegetables like bell peppers or spinach.
