Ingredients

  • 2 cups whole wheat pasta
  • 1 cup cooked chicken breast, diced
  • 1 cup Greek yogurt
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the whole wheat pasta according to package instructions, then drain and cool.
  2. In a large bowl, combine Greek yogurt, olive oil, lemon juice, salt, and pepper.
  3. Add the cooled pasta, chicken, cherry tomatoes, cucumber, red onion, and parsley to the bowl.
