Description
Creamy Garlic Butter Chicken and Rigatoni in Parmesan Sauce is a delightful comfort food that combines tender chicken, hearty rigatoni, and a luscious garlic butter sauce.
Ingredients
- Rigatoni pasta: 12 oz (about 340 g)
- Chicken breast: 2 boneless, skinless (approximately 1 lb or 450 g)
- Garlic: 4 cloves, minced
- Butter: 4 tablespoons (about 60 g)
- Heavy cream: 1 cup (240 ml)
- Parmesan cheese: 1 cup, grated (plus extra for serving)
- Fresh parsley: 1/4 cup, chopped
- Salt and pepper: to taste
Instructions
- Bring a large pot of salted water to a boil and cook the rigatoni according to package instructions until al dente, about 10-12 minutes. Drain and reserve 1/2 cup of pasta water.
- Season the chicken breasts with salt and pepper. In a skillet, melt 2 tablespoons of butter over medium heat and cook the chicken for 6-7 minutes on each side until golden brown and cooked through. Remove and let rest before slicing.
- In the same skillet, melt the remaining 2 tablespoons of butter, add minced garlic, and sauté for about 1 minute. Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and smooth.
- Add the cooked rigatoni and sliced chicken to the skillet, tossing to coat in the sauce. Cook for an additional 2-3 minutes to heat through.
- Stir in chopped parsley, adjust seasoning with salt and pepper, and serve with extra Parmesan cheese on top.
Notes
- Overcooking the pasta can lead to a mushy texture.
- Be careful not to burn the garlic as it can taste bitter.
- Always reserve pasta water to adjust sauce consistency.
- Let the chicken rest after cooking for juiciness.
- Use high-quality Parmesan cheese for the best flavor.
