Ingredients

  • Rigatoni pasta: 12 oz (about 340 g)
  • Chicken breast: 2 boneless, skinless (approximately 1 lb or 450 g)
  • Garlic: 4 cloves, minced
  • Butter: 4 tablespoons (about 60 g)
  • Heavy cream: 1 cup (240 ml)
  • Parmesan cheese: 1 cup, grated (plus extra for serving)
  • Fresh parsley: 1/4 cup, chopped
  • Salt and pepper: to taste

Instructions

  1. Bring a large pot of salted water to a boil and cook the rigatoni according to package instructions until al dente, about 10-12 minutes. Drain and reserve 1/2 cup of pasta water.
  2. Season the chicken breasts with salt and pepper. In a skillet, melt 2 tablespoons of butter over medium heat and cook the chicken for 6-7 minutes on each side until golden brown and cooked through. Remove and let rest before slicing.
  3. In the same skillet, melt the remaining 2 tablespoons of butter, add minced garlic, and sauté for about 1 minute. Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and smooth.
  4. Add the cooked rigatoni and sliced chicken to the skillet, tossing to coat in the sauce. Cook for an additional 2-3 minutes to heat through.
  5. Stir in chopped parsley, adjust seasoning with salt and pepper, and serve with extra Parmesan cheese on top.
