Instructions

  1. In a pot, melt butter over medium heat.
  2. Add onions and sauté until caramelized, about 15 minutes.
  3. Add mushrooms and garlic, cooking for another 5 minutes.
  4. Stir in vegetable broth and thyme, then bring to a simmer.
  5. Simmer for 20 minutes, then stir in heavy cream.
  6. Season with salt and pepper.
  7. Serve hot with French bread.
