- 1 large onion, thinly sliced
- 1 cup mushrooms, sliced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 teaspoon thyme

- French bread, for serving
Instructions
- In a pot, melt butter over medium heat.
- Add onions and sauté until caramelized, about 15 minutes.
- Add mushrooms and garlic, cooking for another 5 minutes.
- Stir in vegetable broth and thyme, then bring to a simmer.
- Simmer for 20 minutes, then stir in heavy cream.
- Season with salt and pepper.
- Serve hot with French bread.
