Ingredients

- 8 oz elbow macaroni
- 4 hard-boiled eggs, chopped
- 1/2 cup mayonnaise
- 2 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
- 1/4 cup chopped green onions
- 1/4 cup sweet pickle relish
- Salt and pepper to taste
- 1/4 tsp paprika
Instructions
- Cook the macaroni according to package instructions. Drain and let cool.
- In a large bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper.
- Add the chopped hard-boiled eggs, green onions, and sweet pickle relish to the bowl.
- Mix in the cooled macaroni until well combined.
- Sprinkle paprika on top before serving.
Notes
- Chill the salad for at least 30 minutes before serving for better flavor.
- Adjust mustard and vinegar to taste.
- Can be stored in the refrigerator for up to 3 days.
