Ingredients
- Chicken breast: 2 large (about 500g), diced
- Pasta: 300g (fettuccine or penne)
- Heavy cream: 1 cup (240ml)
- Garlic: 4 cloves, minced
- Parmesan cheese: 1 cup, grated (plus extra for serving)
- Fresh spinach: 2 cups (about 60g), chopped
- Olive oil: 2 tablespoons
- Salt and pepper: to taste
Instructions
- Prepare the chicken by washing, drying, and dicing it into bite-sized pieces. Season with salt and pepper.
- Cook the pasta in salted boiling water until al dente, then drain and reserve 1 cup of pasta water.
- In a skillet, heat olive oil and sauté minced garlic until fragrant. Add heavy cream and bring to a simmer.
- Stir in grated Parmesan cheese until melted, then add chopped spinach and cook until wilted.
- Combine the cooked chicken and drained pasta with the creamy sauce, adjusting consistency with reserved pasta water if needed. Serve with extra Parmesan cheese on top.
