Ingredients

  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 pound chicken breast, cooked and shredded
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened.
  3. Stir in garlic and cook for another minute.
  4. Add shredded chicken and chicken broth. Bring to a boil.
  5. Reduce heat and stir in heavy cream and parmesan cheese.
  6. Add basil, oregano, salt, and pepper. Simmer for 10 minutes.
  7. Garnish with fresh parsley before serving.
