Ingredients

- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 pound chicken breast, cooked and shredded
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened.
- Stir in garlic and cook for another minute.
- Add shredded chicken and chicken broth. Bring to a boil.
- Reduce heat and stir in heavy cream and parmesan cheese.
- Add basil, oregano, salt, and pepper. Simmer for 10 minutes.
- Garnish with fresh parsley before serving.
