- 2 Carrots, diced
- 2 Celery stalks, diced
- 1 Onion, chopped
- 2 Garlic cloves, minced
- 1 cup Broccoli, chopped
- 1 cup Cauliflower, chopped
- 4 cups Vegetable broth
- 2 tablespoons Olive oil
- 1 cup Heavy cream
- 1 cup Cheddar cheese, shredded
- Salt, to taste
- Pepper, to taste
Instructions
- Wash and prepare all vegetables by dicing and chopping them as needed.
- In a large pot, heat olive oil over medium heat and sauté carrots, celery, and onion for 5-7 minutes.
- Add minced garlic and cook for an additional 1-2 minutes.
- Pour in vegetable broth and bring to a boil, then reduce heat and add broccoli and cauliflower. Simmer for 10-15 minutes.
- Blend the soup until creamy, either with an immersion blender or in batches with a regular blender.
- Return the blended soup to low heat, stir in heavy cream and cheddar cheese until melted, and season with salt and pepper to taste.
- Serve warm, garnished with additional cheddar cheese if desired.
