Ingredients

- 1 head of cauliflower, chopped
- 1 onion, diced
- 2 cloves of garlic, minced
- 4 cups of vegetable broth
- 1 cup of heavy cream
- Salt to taste
- Pepper to taste
- Olive oil for sautéing
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic; sauté until soft.
- Add chopped cauliflower and vegetable broth.
- Bring to a boil, then reduce heat and simmer until cauliflower is tender.
- Blend the mixture until smooth.
- Stir in heavy cream and heat through.
- Season with salt and pepper.
- Serve warm.
Notes
- For a vegan version, replace heavy cream with coconut milk.
- Top with croutons or fresh herbs for garnish.
