Creamy Cajun chicken pasta with whipped roasted garlic feta and crispy chickpeas.


Ingredients

  • 8 oz penne pasta
  • 1 lb chicken breast, diced
  • 2 tbsp Cajun seasoning
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • 1 cup whipped roasted garlic feta
  • 1 can chickpeas, drained and rinsed
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Add chickpeas and season with salt and pepper. Cook until crispy, about 10 minutes. Remove and set aside.
  3. In the same skillet, add diced chicken and Cajun seasoning. Cook until chicken is browned and cooked through.
  4. Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese and mix until smooth.
  5. Add cooked pasta and whipped roasted garlic feta to the skillet. Toss to combine.
  6. Top with crispy chickpeas and garnish with fresh parsley before serving.
