Ingredients

  • 1 cup Arborio rice
  • 4 cups whole milk
  • 1 cup heavy cream
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup raisins (optional)

Instructions

  1. Rinse the Arborio rice under cold water.
  2. In a saucepan, combine the rice, milk, and cream. Bring to a simmer over medium heat.
  3. Add sugar, vanilla, cinnamon, and salt. Stir well.
  4. Reduce heat to low and cook for 30-40 minutes, stirring frequently until rice is tender.
  5. In a bowl, whisk the eggs. Gradually add a little of the hot rice mixture to the eggs, stirring constantly.
  6. Pour the egg mixture back into the saucepan, stirring constantly.
  7. Cook for an additional 5-10 minutes until thickened. Add raisins if using.
  8. Remove from heat and let cool slightly before serving.
