Ingredients

- 2 cups all-purpose flour
- 1 cup sugar
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 cup canned pumpkin
- 1/2 cup vegetable oil
- 4 large eggs
- 8 ounces cream cheese
- 1/4 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, sugar, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, combine pumpkin, oil, and eggs.
- Mix the wet ingredients into the dry ingredients until just combined.
- In a separate bowl, blend cream cheese and powdered sugar until smooth.
- Pour half the pumpkin batter into a greased loaf pan.
- Spread the cream cheese mixture over the batter.
- Top with the remaining pumpkin batter.
- Bake for 60-70 minutes or until a toothpick comes out clean.
- Let cool before slicing.
Notes
- Store in an airtight container.
- Can be frozen for later use.
- Use fresh pumpkin puree for a richer taste.
