Description

Cream cheese chicken enchiladas are a delicious and creamy twist on traditional enchiladas.


Ingredients

  • 2 cups cooked shredded chicken
  • 8 oz cream cheese, softened
  • 1 cup shredded cheese
  • 1 can (10 oz) enchilada sauce
  • 8 flour tortillas
  • 1/2 cup diced onions
  • 1/2 cup chopped bell peppers
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1/2 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix cooked chicken, cream cheese, half of the shredded cheese, onions, bell peppers, garlic powder, cumin, and salt.
  3. Spread a small amount of enchilada sauce in the bottom of a baking dish.
  4. Fill each tortilla with the chicken mixture and roll up.
  5. Place rolled tortillas seam side down in the baking dish.
  6. Pour remaining enchilada sauce over the top.
  7. Sprinkle with the remaining shredded cheese.
  8. Bake for 25-30 minutes until heated through and cheese is bubbly.

Notes

  • Use rotisserie chicken for quicker preparation.
  • Top with sour cream or avocado if desired.
  • Store leftovers in an airtight container in the fridge.
