Ingredients
- Chicken breast: 1 lb (450 g), diced
- Cream cheese: 8 oz (225 g), softened
- Black beans: 1 can (15 oz or 425 g), drained and rinsed
- Corn: 1 can (15 oz or 425 g), drained
- Diced tomatoes: 1 can (14.5 oz or 410 g), with juices
- Chili powder: 2 tablespoons
- Cumin: 1 tablespoon
- Garlic: 3 cloves, minced
- Onion: 1 medium, diced
- Bell pepper: 1 medium, diced (any color)
- Olive oil: 1 tablespoon
- Salt and pepper: to taste
Instructions
- Prepare the chicken by dicing it into bite-sized pieces.
- Sauté the diced onion and bell pepper in olive oil over medium heat for about 5 minutes.
- Add minced garlic and cook for an additional 1-2 minutes.
- Add the diced chicken, season with salt, pepper, chili powder, and cumin, and cook for 5-7 minutes until the chicken is no longer pink.
- Stir in black beans, corn, and diced tomatoes, and let the mixture simmer for 10-15 minutes.
- Reduce heat to low and add softened cream cheese, stirring until fully melted and incorporated.
- Adjust seasoning if needed, then serve warm with desired toppings.
Notes
- Adjust spice levels to your preference by adding more or less chili powder and cumin.
- This chili can be made ahead of time and stored in the refrigerator for up to three days.
- It can also be frozen for up to three months; thaw overnight in the fridge before reheating.
