Ingredients

- 1 cup quinoa
- 2 cups water
- 1 cup cranberries
- 1 apple, diced
- 1/4 cup walnuts, chopped
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- Combine quinoa and water in a pot. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Fluff quinoa with a fork and let it cool.
- In a large bowl, mix cranberries, apple, walnuts, and feta.
- Add cooled quinoa to the bowl.
- In a small bowl, whisk olive oil, honey, lemon juice, salt, and pepper.
- Pour dressing over the salad and toss to combine.
- Serve chilled or at room temperature.
Notes
- For a vegan option, omit feta cheese.
- Feel free to add other ingredients like spinach or arugula.
