Ingredients

  • 1 cup breadcrumbs
  • 1/2 cup onion, chopped
  • 1/2 cup bell pepper, chopped
  • 1/4 cup milk
  • 1 egg
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups mashed potatoes
  • 1 cup shredded cheese
  • 1/2 cup barbecue sauce

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix ground beef, breadcrumbs, onion, bell pepper, milk, egg, Worcestershire sauce, garlic powder, salt, and black pepper.
  3. Shape the mixture into a loaf and place it in a greased baking dish.
  4. Spread barbecue sauce over the meatloaf.
  5. Bake for 45 minutes.
  6. Remove from oven and let it rest for 10 minutes.
  7. Spread mashed potatoes over the meatloaf.
  8. Sprinkle shredded cheese on top.
  9. Bake for an additional 15 minutes until cheese is melted and bubbly.
