Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix cottage cheese and eggs until smooth.
- Add shredded cheese, diced vegetables, salt, and pepper. Stir well.
- Pour the mixture into a greased muffin tin.
- Bake for 20-25 minutes or until set.
- Let cool slightly before removing from the tin.
