- 1 cup cottage cheese (drained if necessary)
- 1 ½ cups all-purpose flour
- ¾ cup brown sugar (packed)
- ½ cup chocolate chips (semi-sweet or milk chocolate)
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- ½ cup unsalted butter (softened)
- ¼ teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the chocolate chips until evenly distributed.
- Drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes until the edges are lightly golden and the centers are set.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a chewier cookie, add an extra tablespoon of cottage cheese.
- Store leftover cookies in an airtight container at room temperature for up to a week.
- Freeze cookies in a freezer-safe bag for up to three months.
