A delicious cornbread salad packed with flavors and textures.
Ingredients

- 1 batch of cornbread, crumbled
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 red bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, diced
- 1 cup shredded cheese
- 1/2 cup ranch dressing
- 1/4 cup fresh cilantro, chopped
Instructions
- Prepare the cornbread according to package instructions and let it cool.
- Crumble the cornbread into a large mixing bowl.
- Add black beans, corn, bell pepper, tomatoes, red onion, and cheese to the bowl.
- Pour ranch dressing over the mixture and toss gently.
- Fold in the cilantro.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Adjust dressing to taste.
- Feel free to add avocado or other vegetables.
- This salad can be made a day in advance.
