A delicious copycat recipe for Chili’s Southwest Egg Rolls.
Ingredients

- 1 cup cooked chicken, shredded
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn, drained
- 1/2 cup red bell pepper, diced
- 1/4 cup green onion, chopped
- 1/4 cup cilantro, chopped
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup shredded cheese (cheddar or pepper jack)
- 8 large flour tortillas
- Oil for frying
Instructions
- In a bowl, mix chicken, black beans, corn, red bell pepper, green onion, cilantro, cumin, chili powder, and cheese.
- Place a generous amount of the mixture in the center of each tortilla.
- Fold in the sides and roll tightly.
- Heat oil in a large skillet over medium heat.
- Fry the egg rolls until golden brown on all sides.
- Drain on paper towels.
- Serve with your favorite dipping sauce.
Notes
- For a healthier option, bake instead of frying.
- Customize filling with your choice of ingredients.
