Ingredients

- 1 cup red kidney beans, cooked
- 1 cup black beans, cooked
- 1 cup garbanzo beans, cooked
- 1 cup corn, cooked
- 1 bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- Salt to taste
Instructions
- Combine all beans in a large bowl.
- Add diced bell pepper, cherry tomatoes, red onion, and cilantro.
- In a small bowl, whisk together olive oil, lime juice, and salt.
- Pour dressing over the salad and toss gently.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Feel free to add other vegetables like cucumber or avocado.
- This salad can be made a day in advance for better flavor.
